Honey-Sweetened Strawberry Blackberry Galette Filling

A rustic, honey-sweetened strawberry and blackberry galette with a hint of cardamom, wrapped in a buttery crust and topped with homemade vanilla sugar.

Ingredients

  • 1 cup fresh strawberries hulled and sliced
  • 1 cup fresh blackberries
  • 2-3 tablespoon honey adjust to taste
  • 1 tablespoon cornstarch or 1½ tsp arrowroot powder
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon sea salt

To Finish:

  • Vanilla sugar for sprinkling

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a bowl, gently toss all the filling ingredients until the fruit is coated and the cornstarch is mostly dissolved. Set aside.
  • Roll out your crust into a 10–12 inch circle on parchment paper. Place in a pie pan or on a cookie sheet.
  • Spoon the filling into the center, leaving a 1½–2 inch border.
  • Fold the edges of the crust over the fruit, pleating as needed.
  • Sprinkle generously with vanilla sugar.
  • Bake for 35–40 minutes, or until golden and bubbling.
  • Let rest at least 15 minutes before slicing.

Notes

Cardamom adds a warm, floral note, but you could swap it for cinnamon or leave the spice out entirely.
This is best eaten the day it’s made, but leftovers hold up well for breakfast with a spoonful of yogurt.
